Apple Sago Pudding – Tasty and Healthy Dessert

Serves 4

Ingredients:

● ⅓ cup (3 oz/ 90 g) caster sugar

● ½ cup (3 ½ oz/ 100 g) sago

● 20 fl oz (600 ml) fat-reduced milk

● ⅓ cup (2 oz/ 55 g) sultanas

● 1 teaspoon vanilla essence

● pinch ground nutmeg

● ¼ teaspoon ground cinnamon

● 2 eggs, lightly beaten

● 3 small ripe apples ( about 8 oz/250 g),peeled, cored and very thinly sliced

● 1 tablespoon soft brown sugar

Directions:

1 Preheat the oven to moderate 350°F/Gas 4 (180°C). Grease a 1.5 litre ceramic soufflé dish. Place the sugar, sago, milk, sultanas and ¼ teaspoon salt in a saucepan and heat, stirring often. Bring to the boil and simmer for 5 minutes.

2 Stir in the vanilla essence, nutmeg, cinnamon, egg and the apple slices, then pour into the prepared dish. Sprinkle with the brown sugar and bake for 45 minutes, or until set and golden brown.
